Lunch MENU: Eggplant parm…sort of.
My mom decided to fry a bunch of slices of eggplant to make parm and seeing as its my fav. I decided to not indulge in the cheesy goodness the way mom makes and instead enjoy the following…
- 2 slices x Eggplant Lightly fried
- 1/2 cup x Long grain Brown rice
- 1 cup x Arugula Spring blend drizzled with olive oil & Balsamic Vinegar
- I topped the eggplant with a tblsp of salsa and it was delish!
