Lunch MENU: Spinach Nom!

I know I wanted something fresh today and packed with protein since my gym class was going to use up all of my reserved energy.. So here’s what I prepared at home….
I am enjoying….
Base : 1 Cup - Fresh Spinach
Topped with: 1/2cup - Quinoa, 1/2cup - Adzuki Beans (Fresh) and 2tbsp Roasted Red Pepper hummus
Dressing: Drizzle of Olive Oil and Vinegar
Drinks: 1 Bottle of water
This is light and doesn’t make me feel lethargic for the remainder of the day…
I can’t wait for my afternoon snack! Babybel Light Cheese.. omgggg IM INSANELY IN LOVE WITH CHEESE.. I need to fix that lol
